Invented in the city of Bursa in the late 19th century, rotating meat has become famous in America under its Greek name, Gyro, and in Europe under its Turkish name Doner. Both names, along with the Arabic Shwarma, refer to the act of rotation itself (consider the gyroscope) Whatever you call it, the Gyro / Doner's strength lies in its versatility. Whether made of lamb or pork, prepared well or poorly or rotated vertically or horizantally, it will always be delicious.
